Well snowstorm Jonas has officially hit the city of Philadelphia and I'm seeking refuge inside. The streets are covered in a little over a foot of snow and the wind is whipping. I've braved the snowflakes a few times already today to get the dog outside and shovel out the sidewalk.
Could there be a more perfect day to stay inside, catch up on homework and bake tasty treats? I think not. So I thought to make a double batch of what I call "Grain Free Chocolate and Cranberry Protein Muffins." I know, its a big name so you can just call them healthy-ish chocolate muffins.
Ingredients:
2 Cups Almond Meal/Flour
2 Eggs
2 Scoops of BSN Syntha 6, Choc. Milkshake
1/2 Cup Dried Cranberries or Raisins
2 TBSP Flax Seed
1/4 tsp Baking Soda
1/4 tsp Coarse Salt
1/4 tsp Cinnamon
1/4 tsp other favorite spices
~1/4 cup Milk, Water, or Almond Milk (just enough liquid so all ingredients looks sticky, but not runny)
Bake 350 for 15 minutes
I like to take 1 or 2 of these with me to school to have as a morning snack or evening snack. They are pretty tasty, filling, and easy to make.
